Stan’s Bench Blanc de Blanc

During sparkling wine week, one of the highlights to try is our Stan's Bench Blanc de Blanc. "Blanc de Blancs," meaning "white from whites," is a sparkling wine made exclusively from white grapes, ours being made of 100% Chardonnay. This wine reflects the careful attention to detail and the unique conditions of our vineyard. The grapes, harvested from a north-south vineyard on the West side of the mountain on Golden Mile Bench, are planted at higher elevations to preserve their freshness and acidity. They were gently pressed with minimal skin contact and fermented in stainless steel tanks. What makes this wine particularly special is its méthode classique secondary fermentation in the bottle, aging on the lees for three years before disgorging. This extended aging adds complexity and depth.

A vibrant bouquet with aromas of zesty citrus and fresh green apple mingle with rich, inviting notes of brioche and a delicate hint of orange blossom. On the palate, the wine delivers a lively symphony of fresh citrus flavours, supported by a crisp acidity. Its delicate structure and dry finish make it a sophisticated choice for celebrating any special moment or simply enjoying a well-made sparkling wine. Whether paired with a fancy dinner or sipped on its own, this wine embodies elegance and freshness.

When it comes to food pairings, Stan's Bench Blanc de Blanc shines with a variety of dishes. It complements smoked salmon canapés beautifully, as the smoky richness of the salmon pairs perfectly with the wine's brioche aroma and lively acidity. For a more decadent option, try it with lobster risotto; the creamy, tender lobster dish enhances the wine’s citrus and green apple notes. For a light and fresh option look to goat cheese tartlets, as the tangy cheese balances with the citrus and orange blossom aromas.

N° 020 Perle de Rosé

In addition to Blanc de blanc our winery also offers our N° 020 Perle de Rosé. This sparkling rosé, a blend of 91% Merlot and 9% Cabernet Franc, offers a different but equally delightful experience. The 2022 vintage was shaped by a cooler spring and a slow start to the season, with steady heat and minimal rain throughout July and August. The warmest October on record allowed the grapes to ripen due to the prolonged ripening period, resulting in a wine with vibrant acidity and a classic style.

N 020 Perle de Rosé has a pale rose gold hue, and a lively, vibrant nose filled with aromas of pink lady apples, stone fruit, and freshly baked biscuits. On the palate, it is rich and textured, with bright red fruit flavors like strawberries and a note of cream. The fine mousse carries these flavors through to a lively, refreshing finish.

To pair the Perle de Rosé with food, try a fresh watercress, cherry, and toasted sesame salad or a roasted beet and ricotta tart in a walnut crust. Classic blinis topped with smoked sturgeon and crème fraiche also work beautifully, as does a hearty cioppino made with Salt Spring Island mussels, Dungeness crab, and halibut. These dishes highlight the wine’s vibrant acidity and make any occasion special.
